Lo mein


  • 8 ounces lo mein egg noodles
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • Thumb of ginger, mincedginger min,
  • 2 cups cremini mushrooms, sliced


  • Firm tofu, firm, fry
  • 1 red bell pepper, juliennedto
  • 1 carrot, julienneds
  • firm tofu, fried til wrinkled
  • 3 cups baby spinach

 Garnish with sliced garlic onion greens or scallions and parsley.
