Shabu Shabu is one of Japan’s most popular hot pot dishes. The name “shabu shabu” is the sound when you stir the vegetables+meat with your chopsticks and ‘swish swish’ in the hot pot. Everyone sits around the hot pot at the table, cooks together, and eats while chatting. It’s a communal dining experience.
1 lb. sirloin beef, sliced very thinly
1/2 head of Chinese Napa cabbage sliced
1 pack enoki mushrooms
8 pcs shitake rehydrated
2 small carrots sliced thinly, on a diagonal
1 block firm tofu, cut into cubes
1 spring onions, chopped diagonally
4 inch kombu
Sesame Sauce
3 tbsp white sesame seeds, lightly toasted
1/2 cup dashi
4 tsp sake
1/2 tbsp mirin
1 tbsp soy sauce
1/2 tsp sugar
1 garlic clove, minced
Ponzu Sauce
juice from 1 lemon
3 tsp soy
3 tsp mirin
Light Broth for dipping:
In a pot with 4 cups water, add kombu, simmer 20 minutes and discard. Add a tablespoon of white miso, and soy to taste.
