Garam Masala is an aromatic blend of Indian spices. Garam masala is better when made with whole spices that have been roasted and ground. This is my version on the spices used.
Cumin
Coriander
Cardamom (This is a strong flavor, I leave it out)
Black pepper ( Although white pepper has more bite)
Cinnamon
Cloves
Nutmeg
Aji Amarillo ( I add this for heat and bright yellow color)
Cayenne pepper or arbor pepper ( I add this for heat)
Once slightly toasted, the spice a ground finely in a coffee grinder bought for that purpose. (If you use your wife coffee grinder you might get a black eye.)
Store in a air tight container in your pantry.
