Ruccolo and Watercress, Pine Nut Salad

This has evolved from the Ruccolo ( Arugolo ) Salad, but made more main stream in that it includes garlic and olive oil.

Ruccolo

Watercress

Pine nuts

Olive oil

Lemon juice

Slices or Parmesan 

Red onion 

Salt to taste
